Chef
Born in Brazil and raised in Italy, Bruno De Moura Cossio is a talented chef who started his culinary journey at the young age of 16 and worked with many illustrious Italian chefs before joining the team at L’Andana. His cooking philosophy is inspired by the territory, blending childhood memories and the region’s classic products, and is best summarized in a quote by Chef Jean-Pierre Troisgros: “Cooking should be a carefully balanced reflection of all the good things of the earth”. .
Day 1 - Arrival
Welcome to Maremma! L’Andana will be your base for this itinerary. Upon arrival enjoy a welcome aperitif in this outstanding location in Castiglione della Pescaia, followed by a delightful dinner paired with local wines.

Day 2 - Bolgheri, Suvereto, Cheese and Wine
After breakfast, you’ll hit the road to visit a special cheese factory specialized in raw-milk cheesemaking and then visit the charming village of Bolgheri, where you’ll have time for lunch and exploration. In the afternoon, you’ll head south to Suvereto, one of Italy’s most beautiful villages, for a visit to its enchanting walled centre and an interesting wine tasting session at Cantina Petra, whose cellar has been stunningly dug into the hill.

Day 3 - Cooking and relax
In the morning, the Chef will join you for a hands-on cooking class focused on traditional Tuscan recipes. Then, the rest of the day will be dedicated to rest, with some rejuvenating treatments in the hotel’s spa, a swim in the outdoor heated pool, or some toes-in-the-sand relaxation in one of the beautiful beaches of Castiglione della Pescaia.

Day 4 Horseback riding & Capalbio
On your last day in Maremma, a horseback riding excursion will give you the chance to experience the beautiful nature and splendid scenery of the area from a unique point of view. Afterwards, you’ll drive towards the Maremma coast up to the enchanting old town of Capalbio, where you will have time to enjoy a delightful lunch at a traditional trattoria and discover all the main attractions.

Hotel L’Andana

Castiglione della Pescaia
Castiglione della Pescaia is a picturesque coastal town of Etruscan origin with long stretches of sandy beach surrounded by lush pine forests. Its old town, perched atop a hill, is still protected by the walls erected by the Pisans in the 10th century and is dominated by an imposing medieval fortress. Views from up there cover the whole coast and the town’s Diaccia Botrona nature reserve, one of Italy’s most important wetlands.
Maremma
Maremma is an enchanting corner of southwestern Tuscany with a fantastic blend of exceptional cultural heritage and treasured culinary and wine-making traditions. The scenery is beautiful and varied, with an attractively peaceful countryside, unspoiled beaches, natural hot springs, and unique villages shaped by ancient civilizations.
Trattoria Enrico Bartolini
This is the gourmet restaurant of Michelin-starred Chef Enrico Bartolini, who transforms the best local ingredients into delicious creations rooted in the region’s traditions and spiced up with creative twists. The location is equally outstanding: part of L’Andana resort, it occupies the former granary and features an open kitchen with wood-fired oven and large windows framing the surrounding hills and vineyards.
Petra Winery
Immersed in a natural park of unspoiled beauty amid ancient olive trees and a rich Mediterranean scrub, Cantina Petra is a temple dedicated to wine and Tuscany’s deep historical roots. Designed by architect Mario Botta, the cellar was dug into the hillside, thus becoming an element of the landscape. There’s a great attention to the environment, with the implementation of a thoroughly organic farming method and an innovative photovoltaic water system that minimizes the impact of the territory.
Suvereto
Listed among Italy’s most beautiful villages, Suvereto is a charming medieval village with a splendid hilltop location amid the woods and vineyards of Maremma’s verdant Cornia Valley. Its ancient defensive walls enclose delightful streets flanked by charming stone houses, historical buildings, churches filled with precious artworks, and even a curious Doll Museum.
Bolgheri
Bolgheri is an enchanting hilltop village accessible through a long cypress-lined avenue that is considered to be one of the most beautiful roads in the world. The village has maintained its fascinating original layout, with a castle, cobbled alleys lined with stone palaces and defensive walls circling the historical centre. All around are lush vineyards that thrive thanks to the excellent microclimate of this area.
Saba Dairy Farm
The Saba family has been breeding sheep for the production of milk and cheese for over half a century and is specialized in raw-milk cheesemaking. Their key product is the Maremma raw milk Pecorino cheese, which is a Slow Food Presidium created using only raw milk, without any treatment or external enzymes, to guarantee a strict link between the product and its territory. They also collaborate with the Faculty of Agriculture of the University of Pisa to create a pecorino cheese that can fight "bad" cholesterol.
Capalbio
Capalbio is a fascinating medieval town perched atop a hill in Tuscany’s southernmost part. Its thriving cultural and artistic scene won it the nickname of “Little Athens” and gives visitors delightful sights to explore. The historic centre is surrounded by two sets of beautifully-preserved walls once formed for defensive purposes and now offering fantastic views across the coast and the beautiful Maremma countryside.
